How to do it right? :)
ehh .. u r asking how to do it right ... or do it correctly?
I would say that it might be a camera limitation ...
cos most conventional camera do not allow one to:
- select area of focus ... normally spot, center weighted and pattern ... so manual focus comes into play ...
- aperature size .. bigger aperatures like F2.8 will result in bokeh effect ... where u get lesser "depth of field" ... but u get faster shutter speed lah ...
in layman dunno how to explain ... Benny help help please ...

Ben used a prosumer camera called Canon G9 or something lah ... not exactly a point & shoot camera ...
Prosumer camera do allow manual focus and manual selection of aperature and shutter speed ..

aiyo so easy, if focus the fish at cantre, and the surronding got sharp except the fish, then you focus the fish as surroundings lah and something else at the centre of focal point lor..
